Right choice of Basmati rice

Always use long grain Basmati rice. When cooked, each grain remains separate and only then the real look and taste of biryani emerges.

Wash the rice and soak it in water for 30–40 minutes. When cooked with this, it will become soft and will not break.

Cook rice only till 80%

Rice in biryani should not be cooked completely. Boil till 70-80% so that it becomes perfect while cooking on its own.

Maintain a balance of spices

Adding strong chillies or too much garam masala can make the taste bitter. Therefore use every spice in balance.

Marinate mutton, chicken or paneer in curd, ginger-garlic paste and spices for at least 2-3 hours, so that the flavors penetrate inside.
