After which a sweet was prepared by mixing several layers in the same manner. It tasted amazing. Later this sweet was named Khurchan. Gradually Khurchan became famous across the country. Apart from the local residents, people coming from outside also started liking its taste.

This is how khurchan is prepared

Earlier, Khurchan was prepared by boiling milk in a wide pan, but now a big pan is used for it. In which milk is poured. After the milk boils, the flame is slowed down, after which a rubbery layer forms on the pan. It is taken out and kept. Similarly, scraper is prepared by placing one layer on top of the other. Some artisans add light sugar to it for more sweetness, while some do not use sugar.

Khurchan remains edible only during the stipulated time.

Sweet sellers say that Khurchan remains edible only for a stipulated time. Scabies remain effective for 24 hours in summer and 48 to 72 hours in winter. After which there is a risk of it getting damaged. If you keep it in freeze, the taste of khurchan changes. Although it can be eaten after keeping it frozen for a few days, the taste will change.

Chetan Sharma says that in the year 1908, Dada Pandit Shivlal Ustad had started a confectionery shop. He started making scrapers soon after starting the shop. The taste of Khurchan is wonderful to eat. As per demand, Khurchan is also made sugar free. Khurchan has been included in the list of One District One Cuisine scheme. This will give this sweet a different identity in the country.

Saurabh Aggarwal says that about 100 years ago Dada Bharatumal started making scrapers. After grandfather, his father Mahesh Chandra Agarwal and he himself are engaged in making scrapers. There is no change in the taste of Khurchan between then and now. Now Khurchan has been included in the list of One District One Cuisine scheme. This will increase the fame of Khurchan and the sellers will also get many facilities from the government.

Lalit Sharma says that khurchan has been prepared at his shop since before independence. For about 20 years, he has also been selling other sweets at the Khurchan shop. Khurja is identified with crockery as well as scraper. Now, to give a special shape to that identity, the state government has included it in the list of One District One Cuisine Scheme. This will provide a lot of convenience to businessmen.
